Parmigiano Reggiano PDO would not exist without its land of origin: from the collection to the processing of milk, it all takes place here in the Food Valley, where the skilled hands of its producers create a product known worldwide.
Prosciutto di Parma Value Chain
Its name reflects its origins. A unique product that can only be born here, in the Parma Food Valley, where know-how is handed down through the generations and where there are the ideal climatic conditions for the natural maturation that gives Prosciutto di Parma its unmistakable mildness.
Fish Preserves Value Chain
Few know that the fish preserves sector is a traditional industrial excellence of the Parma Food Valley. This is where the most important Italian companies in the sector are found, which together account for 70% of the production and marketing of all anchovies (in oil and salted) consumed in Italy. The journeys from the ports of Genoa to our area, travelling along the Salt Road, began centuries ago.
Tomato Value Chain
"Red Gold” flows in this land. In the Parma Food Valley, the red and particularly well-drained soils give this vegetable a unique, very sweet and delicate taste. A flavour that has come down to us through the centuries thanks to the work of our farmers, custodians of ancient agricultural traditions.
Pasta Value Chain
When it comes to good food, our territory is one of the richest and most productive in Italy. One of these foods is pasta: a symbol of Italian culture, strongly linked to our territory. The first automated pasta making machines were created right here, in the heart of the ducal city.

At the Valserena Abbey, we meet Paolo Bulgarelli - Milk purchasing quality manager of Parmalat Italia and the Castelli Group. This is the ideal place to proudly narrate the know-how at the basis of Italy’s largest milk chain. A story that speaks of wellbeing all the way around: from the earth to the people and the animals’ welfare.

FOOD System is just one of the innovative initiatives at the university level in which Parma is a leader in Italy. Agri-food education is of key importance for the University of Parma, with many degree courses dedicated to food and gastronomic culture.
ALMA
At the gates of Parma, in Colorno, on the banks of the Po River, in the heart of our land. Alma, the globally recognized training centre for Italian Cuisine and Hospitality, has exported our culinary culture to the most renowned restaurants in the world.
Food Farm 4.0
The first “Territorial Workshop for Employability” in the agri-food sector that provides a continuous exchange between training and the world of work. Students work and learn at the same time, participating in all the phases of production in the sector.
